Wine of my life

Mikrosvín Mikulov – this is a winery with a distinguished history, solid values, real story and its own unmistakable path.  We are both Pálava and Dunajovice hills, we are Železná, Goldhamer, Ořechová hora as well as Purmice. We honour the legacy of our ancestors and several generations of zealous and successful Moravian winemakers. This is what we are. We should also mention what we are not? We are not high-minded, because that doesn't pay in the wine business. We're just proud. Proud and humble. We are proud of our origins, proud of our unique terroir, proud of the raw material we have the opportunity to work with year after year, proud of the wines hidden behind our label that constantly entertain and surprise you, and ultimately proud of our team and unique persons that have been a part of all this. We are Mikrosvín. Simply, no compromise.

Wine of my life

I may remember from school that it was the Romans, who established wine in Moravia. Some of you may even remember that it was their Xth Legion and then that the industry grew and flourished under the Great Moravian Empire. What I do remember quite well, however, is when, in the early 1990s, on the verge of my adulthood, things began to become clear to me. Yeah, that too. But also other things started to make sense - for example, why my dad kept bringing home the same wines from the same winemaker. For any family celebration, event or occasion … he always bought wines from the Mikulov region, always Dolní Dunajovice. At first ZOD and then Mikrosvín. It was always Mikrosvín and its oenologist Josef Peřina, whose wine was on our table. My dad used to call it “a safe bet”. Occasionally, there was an opportunity to taste (somewhere else), something different, which a host called wine – sometimes I would rather say “wine”. And I got the meaning of his words. So, the Welschriesling, Pinot Blanc or Chardonnay from the limestone vineyards of Pálava and Mikrosvín have taught me how to love wine.

I guess it's fate and today I stand on the other side. With full respect I have become a part of the history of Mikrosvín Mikulov Winery. I have just continued to develop a rich history, working with great people. I have the opportunity to work on the best vineyards in this country and I finally sell amazing wines that have also become a "sure bet" in thousands of homes, businesses, restaurants or even clubs. I sell Mikrosvín Mikulov wine. The wine of my life.

So, where shall I start? Birth, perhaps? O.K., why not. Two people were important for my birth - my mom … and also my dad. The same dad, who started to love winemaking in Jaroslavice in the Znojmo region and who has also inspired me and my brother to do the same thing. The time I spent playing the childhood football was almost the same as the time we spent with my dad in a vineyard or in a cellar. A sad thing? Not at all! I do not play football anymore and I do not even try to. But wine has won me over completely and with all that goes with it. I have been fascinated by the constant challenge that nature and the vegetation cycles present to us. I can watch a vineyard for hours to understand its laws and to understand what subsequently goes into my cellar. A raw material you don't want to stand in the way of. Just looking for the perfect cooperation of wine, a vessel and a winemaker. And at the end? At the end, you observe your own expression as you taste your first glass from “that” bottle. The bottle that is the reason you find your work meaningful. The bottle that makes moments with your family special. A bottle that enhances the experience of a great meal. Or a bottle as a gift that makes your friend happy. A bottle of Welschriesling ... the wine of my life.

Production

Wine cellars are located in the wine-growing municipality of Dolní Dunajovice in the Mikulov wine sub-region at the foot of the Pálava hills right in the middle of the vineyards. Its location is just great for a quick and short transfer of grapes from the vineyards to the cellars. The cellars were built in the end of the 19th century and are made of classic firebricks. They can hold more than 500,000 litres of wine. Our production is about half that, so there is plenty of space in the cellars for archiving, with absolutely perfect storage conditions with plenty of humidity, a proper temperature and no access to daylight.

We make sure to process our grapes as gently as possible. The grapes are destemmed without crushing the grapes themselves. The mash is transported to the press either by self-propulsion or by an "OLIVE" pump. Only the subsequent pressing is carried out using a pneumatic press, where it is very important to separate the repressing partolis, the last stage of pressing, from the rest of the must. The fermentation takes place in stainless steel tanks using pure yeast cultures with controlled temperatures between 18-20°C. A selected part of the production is, of course, fermented in barrels. Further finishing and aging of the wine continues to take place in stainless steel tanks. The coarse filtration of the wine is carried out using a quartz filter and for further fine filtrations only a plate filter is used. We take an individual approach to bottling of each wine. Storage in the company's archive cellars is the final step of the process. There the wine matures properly in bottles and is intended for sale to customers.

Red wine production requires considerable patience and experience. It is a much longer process than the production of white wines. We process blue grapes manually and the material for the best quality production is carefully selected. Grapes are separated from stems and then fermented with a pure yeast culture. We mix the yeast manually and check daily. After pressing, the young wine is pumped into wooden barrels and left to age. The malolactic fermentation is usually carried out in stainless steel vessels and subsequently the wine is stored in a barrel, which is a great storage tool due to its thermal balance. The wine is left unfiltered for as long as possible and, if the vintage permits, spontaneous training takes place. The bottled wine is then left to mature in the cellars at a constant temperature of 12°C.

Of course, people are crucial to winemaking. This has always been and still is true (more than ever) at Mikros. We produce top quality wine; we operate in an exceptional terroir with vineyards on first class tracks. That is a huge commitment. We cannot afford and we do not want to act against nature. We do everything in the utmost harmony with it. That is why our people, their passion, their hearts and, last but not least, their hands are indispensable for our "Standard, Flower or Traditional” products.

We can say of all of them that Mikros is "the wine of their lives “.
